Key Responsibilities

The Night Steward / Overnight Restaurant Cleaning Steward is responsible for all activities pertaining to cleaning/maintaining the Food and Beverage storage, preparation and service areas and materials, to include controlling inventories for and ensuring spotless, sanitary condition of all china, glassware, silverware, cookware and serving utensils. In addition, the Steward is responsible for the following:

    -Clean and maintain food and beverage storage/preparation/cooking areas and equipment;
    -Maintain all cleaning standards to meet Health Department requirements in kitchen, bar and restaurant.
    -Clean all tables, chairs and Restaurantt seating areas
    -Ensure all floors, drains and sinks are detailed clean and maintained.
    -Maintain proper sanitation of all dishwashing and pot washing areas and equipment;
    -Operate and maintain dishwashing equipment properly to provide clean, sanitized china, glass and silver;
    -Removal of all trash from kitchen areas, operation of garbage disposal and trash compactor;
    -Maintain control over food and beverage china, glass, silver, cookware and service equipment inventories;
    -Performs breakdown of all food service materials and equipment after banquet functions.


    -Experience working in upscale hotel environment that provides a superior level of guest service with professionalism and discretion
    -Excellent attention to detail
    -Must possess the ability to handle multiple tasks
    -Excellent communication and interpersonal skills
    -Ability to effectively communicate with department managers, team members and guests
    -Must possess a strong team spirit
    -Ability to work a flexible schedule including evening, weekends and holidays

Physical Demands

During the majority of the shift, must be able to:

    -Perform repetitive hand and arm movements;
    -Ability to lift, pull, carry, push up to 50 pounds;
    -Continuous standing and climbing of stairs throughout the day during service hours;
    -Must be able to squat, bend, kneel and twist;
    -Knowledge of dishwashing equipment operation, chemicals and chemical feed equipment.
